Built around the fire

At the center of KUZA is a robata grill fueled by binchōtan charcoal, built around the Japanese tradition of cooking over fire. It burns hotter, cleaner and longer, letting great ingredients speak for themselves.

Across the room, the raw bar brings the contrast: clean cuts and sharp flavors, from bluefin and hamachi to Hokkaido uni, with seafood flown in from Tokyo twice a week.

Executive Chef Erik Davila leads the kitchen. KUZA opened on Scottsdale Road on September 16, 2026.
